This is a fun little bite-sized cookie. Don’t skip the chilling stage, though, or you’ll end up with flat ovals when you go to cut them.
1 c butter
1 c sugar
2 Tbs milk
1 tsp vanilla
2 1/2 c flour
1 c finely chopped red (and) or green candied cherries
1/2 c finely chopped pecans
1 c flaked coconut
Beat butter for 30 seconds. Add sugar and beat till fluffy. Add milk and vanilla and beat. Stir in flour, then cherries, then pecans. Shape into three 12 inch rolls. Coat with coconut, wrap in waxed paper, then chill thoroughly. cut into 1/4 inch slices. Bake at 375F for about 12 minutes, or till edges are golden. Makes plenty.
