Lazy Borsch

If you want a good borsch recipe, go here.  If you want quick and easy, you’re in the right place. 1 can beef broth 1 can water 1 can beats 1 onion, sliced Plain yogurt. Bring first 4 ingredients to a boil in a medium sauce pan.  Serve.  Put a dollop of yogurt, still cold, on top.  Serves 2. Lettuce Soup

Here’s another strange but good recipe for you.  And easy!  Never forget easy.  I got it from my mother.  Lord knows where she got it from. . 1 can beef broth 1 can water 1/2 cup frozen peas 1 cup lettuce, approximately In a medium saucepan bring broth and water to a boil.  Dump in peas.  Tear lettuce into salad-size pieces.  Drop into saucepan with everything else.  Cook until lettuce is limp, aprox 2 minutes.  Serve. Hollywood Salad

Since January is “make up for rum balls month,”  I figure this is a good time to share healthy recipes.  Here’s one my mother learned from my great uncle.  That’s a doctor teaching a food scientist a new recipe. Chicken Noodle Soup

Open one can of chicken noodle soup.  Pour into pot.  Add one can of water….  No? All right, I’ll give you the real McCoy I generally start with precooked chicken.  If you want to start with raw I’ll be glad to discuss it.  Otherwise we start with the cooked bird. Rum Balls

I’ve been eating a lot of these in the last few days, which means I’m going to have to do something in the way of weight loss in the next few months.  Oh well.  They were worth it.  2 c. vanilla wafer crumbs½ c. sugar2 T. white Karo syrup1 scant c. pecans4 T. rum2 T. butter  Mix ingredients and shape into small balls.  Dust with powdered sugar.    Bon Apatite! . Ginger Bread Men

Black Strap Tapioca

1/3 c. sugar 3 T. tapioca 1 T. black strap molasses 2 and 3/4 c. milk 1 egg 1 t. vanilla Mix the sugar, tapioca, milk, molasses, and egg in a medium saucepan.  Cook on medium heat stirring constantly until mixture comes to a full boil.  Set aside for 15 minutes.  Mix in vanilla.  Serve warm immediately or refrigerate and serve later. The Big Muffin

When I first started making this recipe from the side of the cereal box it called for 1/3c oil and 1/2 tsp salt.  Then health conscience set in and it called for 1/4 c oil and no salt, which wasn’t nearly as good.  Now they say reduce the oil even more.  I say, don’t do it.  Maybe add the apple sauce, but don’t reduce the oil.
